Noodle No-Nonsense

Bitesize_AdamAlbinNoodleLunch

The pop-up dinners at Adam & Albin, where a whole month’s preparation has gone into the creation of the one-night-only dining experience, have long been popular with the city’s foodies. The chef duo Adam Dahlberg and Albin Wessman have now launched a noodle lunch, served daily out of their food studio in the heart of town.

Both self-proclaimed noodle addicts, but without any extensive knowledge in the cooking of the Asian staple, lunch goers are treated to *somen*, *soba*, *udon* and *ramen* noodle dishes with a distinct Swedish twist, as many of them are cooked using traditional Nordic techniques such as curing, smoking and souring.
