Eat This Now: Lobster

Monday 25 September at 07:00 marks the start of this year’s fishing of lobster in Swedish waters. Black Gold, as the Swedish lobster is often called, is caught off the west coast of Sweden. The lobster is said to be amongst the best in the world as a result of maturing slowly in the cold water, which gives it a delicate sweet taste. Each year, the first catch is highly anticipated, and usually marks a new record in purchase price.

Less is more. Swedes use two main methods of boiling lobsters. At Wedholms Fisk, they prefer to keep it simple and just cook lobsters in a large pot of salt water. Others prefer to use court-bouillon flavoured with dill and beer. Enjoy the lobster with mayonnaise and a wedge of lemon.
