EAT and the Culinary Institute of America present Plant-forward Global 50, a gathering of 50 of the world’s most forward-thinking chefs who lead the way in developing healthier, more sustainable eating habits. “When it comes to food, chefs are the ultimate trendsetters – from what’s on the plate to what’s creating conversations”, says Dr. Gunhild A. Stordalen, president and founder of EAT.
Two Swedish chefs are featured on the list, both with restaurants in Stockholm. Paul Svensson is the head chef of The Restaurant at Fotografiska, which focuses on greens and uses produce from the animal kingdom as add-ons.
The other is Mathias Dahlgren whose restaurant Rutabaga aims to present the next generation of lacto ova-vegetarian cuisine.
